Sweetpotato Overnight Oats

Ingredients:
- ⅔ cup quick oats
- ¾ cup almond milk (I like vanilla, unsweetened)
- ⅓ cup sweetpotato, mashed
- 1 Tbsp chia seeds
- ¼ cup Greek yogurt (plain or vanilla)
- 1 tsp vanilla
- 1/2 Tbsp maple syrup, optional
- ½ tsp cinnamon
- 1 scoop peanut powder or Peanut butter, optional

Directions
Step 1
Microwave your sweetpotato for 4-6 minutes, until soft. Scoop out the flesh and mash it as much as you can (I do this in a bowl with the back of a spoon, but you could also use a potato masher).
Step 2
Combine all ingredients in a large Tupperware or mason jars. Sometimes, I find it easier to mix everything in a mixing bowl (so the sweetpotato mixes in well), and then transfer to mason jars or overnight oat jars.
Step 3
Put jars in the fridge overnight or for at least 4 hours, allowing the overnight oats to “set” and thicken.
Step 4
Top with berries, chocolate chips, nuts/seeds, nut butter, etc.
